STORY
When Cloud's Coffee was born in 2021, it was crucial to lay a solid foundation for our product line. We knew going into the sampling process that if we wanted to transform the coffee business, we couldn't settle for good enough. During our initial product developmental stages, we sampled hundreds of coffee from across the globe and had to make some very hard decisions on what to keep and what to drop.
The first coffee we sampled was Bali Blue, and after that every origin appeared to fall short of the extraordinarily high standards Bali had set. We were incredibly fortunate to discover a gem in the rough because Indonesian coffees are not as common on the market.
Bali Blue goes through a procedure called "wet-hulling" or "Giling Basah," which is an Indonesian custom of depulping coffee cherries. Indonesia's humid climate makes it more difficult to dry coffee, wasting valuable time during which the coffee could be sold. The drying process is sped up by wet-hulling, giving the coffee a richer, more robust flavor.
